  • 4 pounds elk roast
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 onion sliced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 cup beef or elk broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • Salt and pepper
  • Fresh herbs like rosemary and thyme


  • Set the temperature of the oven to 325 F (163 C).
  • Now, Season the roast with salt and pepper.
  • In a large pan, heat the olive oil over medium-high heat.When it’s warm, put the elk roast and sear it on all side until it’s browned, itmay take around 3-4 minutes on each side.
  • Now, take out the elk roast from the pan and keep it aside.
  • In a similar pan, put some olive oil if needed and add chopped onion, garlic, carrots and celery. Cook until the veggies are soft it may take around 5 minutes.
