  • 1 cross rib roast about 3-4 pounds
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper


  • Set the temperature of the oven to 325 F (165 C).
  • Take the rib roast out from the refrigerator and allow itsite at room temperature from around half an hour to one hour before cooking.It helps in evenly cooking of the meat.
  • In a little bowl, add minced garlic, olive oil, choppedrosemary, black pepper, kosher salt, thyme to create a refreshing herb.
  • Make sure to remove the excess moisture by patting the crossrib roast dry with the help of paper towel.   
  • Now spread the herbs mixture over the cross rib roast byensuring evenly coating form each side.
  • Put the seasoned roast on a rack in the roasting pan with its fatty side facing up to allow melting the meat and keep the meat moist as it cooks.
  • Roast the cross rib roast in the oven for around 20 minutes perpound or until the temperature reaches doneness level. Aim for around 135 F (57C) for medium-rare and 145 F (63 C) for medium.
  • Once the roast reaches your desired level of doneness, just take it out from the oven and transfer it to the cutting board. Cover it with the foil loosely allow it to sit for 15-20 minutes so that juice can evenly spread through the meat.
  • Once resting, cut the cross rib roast into thin slices againstthe grain and you can serve it with your favorite side dish like vegetables,mashed potatoes or salad.
