Ingredients
  

  • 4 cups green tomatoes chopped into small pieces
  • 1/2 cup vinegar white or apple cider vinegar
  • 1/2 cup water
  • 1/4 cup vegetable oil
  • 1 tablespoon mustard seeds
  • 1 tablespoon fenugreek seeds
  • 1 tablespoon turmeric powder
  • 1 tablespoon red chili powder adjust to taste
  • 1 tablespoon salt or to taste
  • 1 tablespoon sugar optional, for balance
  • 4-5 cloves garlic minced (optional)
  • Fresh curry leaves optional

Instructions
 

  • First of all, wash the green tomatoes well. Remove the stems and chop them into small pieces. You can also peel them if you want, but that’s not required.
  • In a little bowl, mix water and vinegar and keep it aside.
  • In a medium-sized frying pan or saucepan, heat the vegetable oil over medium heat. Add fenugreek seeds and mustard seeds. Let them splutter for a few seconds.
