- 1 cup pitted dates chopped
- 1 teaspoon baking soda
- 1 cup boiling water
- 1/2 cup unsalted butter softened
- 1 cup brown sugar packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon optional
- For the Topping optional
- 1/2 cup chopped walnuts or pecans
- Powdered sugar for dusting
Instructions
- Set the temperature of the oven to 175 C (375 F). Grease and flour a 9-inchround cake pan, or line it with parchment paper.
- In a bowl, mix the baking soda and chopped date. Pour boiling over them and let it rest for around 10 minutes until softened.
