Arroz caldoso is a delicious Spanish rice dishwhich is somewhat similar to paella, it is prepared with thinner liquid.

Ingredients
  

  • 1/2 onion chopped
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic minced
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 1 can diced tomatoes undrained
  • 1/2 teaspoon saffron threads
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 cup Spanish rice
  • 1/2 teaspoon black pepper
  • 4 cups fish broth
  • 1/4 cup fresh parsley chopped
  • 1 pound shrimp peeled and deveined

Instructions
 

  • At first, In a large skillet heat the olive oil over mediumflame. Add the garlic, bell peppers, onion and cook until the vegetables aretender, it may take around five minutes.
  • Now, It’s time to add paprika, tomatoes, saffron, salt andpepper. Allow it to cook for one more minute.
  • After adding the rice, simmer it for a minute.
  • Bring to a boil after adding the fish broth. Lower down the heat, cover and simmer for around 18-20 minutes or until the rice is cookedcompletely.
  • After five minutes. Add the prawns and simmer until they arecooked completely.
  • You can add parsley as garnish and it’s time to serve.
