- 2 cups fresh strawberries washed and diced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 teaspoon lemon juice
In a saucepan, mix together sugar and chopped strawberries. Cook it over medium heat, stir occasionally until the strawberries are soft and juicy and it may take around 5-7 minutes.
In a little bowl, mix water and cornstarch until smooth and making a slurry.
Add the cornstarch mixture and strawberries and combine them thoroughly. Cook it until it gets thicker and it may take 2-3 minutes more.
Add the lemon juice to the mixture and mix it well. Now,take it off from the heat and allow it cool completely before using it as a filling.
Once it cools down, you can fill the strawberry filling between the cake layers. You can also use it as a filling in pastries or cupcakes.
