- 1 pound ground beef or ground turkey
- 1 onion diced
- 2 cloves garlic minced
- 4 cups beef or chicken broth
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 can sliced carrots
- 1 can diced potatoes
- 1 cup sliced celery
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper
- 1 cup frozen corn or peas
- Grated Parmesan cheese
In a big pot, cook the turkey or ground beef over medium heat until browned, use a spoon to break it apart. Remove the excess fat.
Put the crushed garlic and chopped onion into the pot with cooked meat. Cook for few minutes until the onions are soft.
Add the chicken broth or beef, tomato sauce and diced tomatoes. Combine everything thoroughly.
Add the sliced celery, sliced carrots, diced potatoes, dried oregano and dried basil to the pot. Adjust the salt and pepper according to taste.
Warm the soup over medium heat until it starts bubbling. Cover and cook it for around 20-25 minutes until the veggies are tender and soft.
You can also put the peas or frozen corn in the soup during the last minutes of cooking until cooked thoroughly.
Taste the soup and adjust the seasoning accordingly.
It’s time to serve the soup with the grated parmesan cheese (if you are using).
