- 1 lb boneless skinless chicken breasts (or thighs)
- 1 small onion diced
- 2-3 carrots peeled and sliced
- 2-3 celery stalks sliced
- 3 cloves garlic minced
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp salt adjust to taste
- 1/4 tsp black pepper
- 1 cup heavy cream or half-and-half for a lighter option
- 1 16 oz package potato gnocchi (shelf-stable or refrigerated)
- 2 cups fresh spinach optional
- 1 tbsp cornstarch optional, for thickening
Put the chicken breasts, sliced carrots, diced onion, minced garlic, sliced celery, thyme, chicken broth, salt and pepper into the crockpot. Mix everything.
Cover and cook until the chicken is well cooked and tender, it may take a round 6 - 8hours on low or 3-4 hours on high flame.
Remove the chicken of the crockpot, using two forks shred it, and place it back into the pot.
Stir in the heavy cream and gnocchi. For a thicker soup, mix cornstarch with 2 tablespoons of cold water to make a slurry and add it now.
Cover the pot and and cook over high flame until gnocchi turn soft, it may take around 30 minutes.
If you are using spinach, mix it in and allow it cook until it welts for around 5 minutes.
Now, you can taste the soup and adjust the seasoning based on your liking. You can try it with crackers or crusty bread for a delicious side.
