Chicken Gnocchi Soup

Ingredients
  

  • 1 lb boneless skinless chicken breasts (or thighs)
  • 1 small onion diced
  • 2-3 carrots peeled and sliced
  • 2-3 celery stalks sliced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • 1 cup heavy cream or half-and-half for a lighter option
  • 1 16 oz package potato gnocchi (shelf-stable or refrigerated)
  • 2 cups fresh spinach optional
  • 1 tbsp cornstarch optional, for thickening

Instructions
 

  • Put the chicken breasts, sliced carrots, diced onion, minced garlic, sliced celery, thyme, chicken broth, salt and pepper into the crockpot. Mix everything.
  • Cover and cook until the chicken is well cooked and tender, it may take a round 6 - 8hours on low or 3-4 hours on high flame.
  • Remove the chicken of the crockpot, using two forks shred it, and place it back into the pot.
  • Stir in the heavy cream and gnocchi. For a thicker soup, mix cornstarch with 2 tablespoons of cold water to make a slurry and add it now.
  • Cover the pot and and cook over high flame until gnocchi turn soft, it may take around 30 minutes.
  • If you are using spinach, mix it in and allow it cook until it welts for around 5 minutes.
  • Now, you can taste the soup and adjust the seasoning based on your liking. You can try it with crackers or crusty bread for a delicious side.
