Chocolate pizzelles are traditional cookies made by Italians with a fancy pizzelle iron that produces very thin, crispy wafers with beautiful designs.

Ingredients
  

  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon anise extract optional
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • A pinch of salt
  • Powdered sugar for dusting optional

Instructions
 

  • Take your pizzelle maker out and follow the directions.
  • In a large bowl whisk well together eggs and sugar till just mixed and add the melted butter, vanilla extract and finally anise extract if using, and mix smooth.
  • In a separate bowl sift flour, cocoa powder, baking powder, and salt all together.
  • Slowly add the dry ones into the wet mixture, just mixing them until combined. The batter should be thick yet smooth.
  • If needed, apply a bit of oil to the pizzelle maker. Drop about 1 tablespoon of the batter onto the center of each mold. Close the lid and cook for about 30-60 seconds or until firm and lightly brown.
  • Carefully remove the pizzelles and allow them to cool completely on a wire rack. They will become crisp as they cool.
  • Dust with powdered sugar and enjoy these delicious chocolate pizzelles! They can be served plain or with whipped cream, ice cream, or your favorite filling.
