cottage cheese

15 oz chickpeas, rinsed and drained

cherry tomatoes
halved

medium cucumber
diced

red onion
finely chopped

avocado
diced (optional)

baby spinach or mixed greens

olive oil

lemon juice

tahini

Salt and pepper to taste
Optional: feta
sunflower seeds, or almonds
Instructions
Whisk olive oil, lemon juice, tahini, cumin, salt, and pepper to make the dressing.
Place spinach or greens in a bowl.
Add chickpeas, tomatoes, cucumber, onion, and avocado.
Spoon cottage cheese over the salad.
Drizzle with dressing and garnish with herbs or optional toppings.
Toss or serve layered.
