- 8 oz about 2 cups pasta (such as rotini, penne, or elbow macaroni)
- 1 cup dill pickles diced (plus some pickle juice)
- 1/2 cup red onion finely chopped
- 1/2 cup celery diced
- 1/2 cup shredded cheddar cheese optional
- 1/4 cup fresh dill chopped (or 1 tablespoon dried dill)
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar or pickle juice
- Salt and pepper to taste
In a large pot, add the salty water and boil it. Add the pasta and cook as per the package instructions until well cooked. Drain and rinse under cool water to cool.
In a big bowl, mix the mayonnaise, apple cider vinegar, dijon mustard, salt and pepper. Mix everything until smooth.
In the bowl, with the dressing, add the cooled pasta, red onion, diced dill pickles, shredded cheddar, celery and fresh dill. Mix gently to combine everything.
Now, taste the salad and adjust the seasoning like pickle juice, salt and pepper based on your taste.
Cover the salad annd put it in the refriegartro for a minumum of an hour to let the flavours meld together.
