Ingredients
  

  • 8 oz about 2 cups pasta (such as rotini, penne, or elbow macaroni)
  • 1 cup dill pickles diced (plus some pickle juice)
  • 1/2 cup red onion finely chopped
  • 1/2 cup celery diced
  • 1/2 cup shredded cheddar cheese optional
  • 1/4 cup fresh dill chopped (or 1 tablespoon dried dill)
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar or pickle juice
  • Salt and pepper to taste

Instructions
 

  • In a large pot, add the salty water and boil it. Add the pasta and cook as per the package instructions until well cooked. Drain and rinse under cool water to cool.
  • In a big bowl, mix the mayonnaise, apple cider vinegar, dijon mustard, salt and pepper. Mix everything until smooth.
  • In the bowl, with the dressing, add the cooled pasta, red onion, diced dill pickles, shredded cheddar, celery and fresh dill. Mix gently to combine everything.
  • Now, taste the salad and adjust the seasoning like pickle juice, salt and pepper based on your taste.
  • Cover the salad annd put it in the refriegartro for a minumum of an hour to let the flavours meld together.
  • It's time to serve the pasta salad. You can enjoy it as a light meal or as a side dish.
