- 6 slices of bread white, whole wheat, or brioche work well
- 4 large eggs
- 1 cup milk or milk alternative
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Optional toppings: maple syrup powdered sugar, fresh fruit, or nuts
Set the temperature of the oven to 175 C (350 F). Grease a muffin tin with butter or cooking spray.
Slice the bread into little cubes. You can go for stale bread for better texture, but fresh bread also goes well.
In a mixing bowl, mix the eggs, sugar, cinnamon, milk, vanilla extract, and salt until throughly combined.
Add the bread pieces into egg mixture and gently mix until all the bread is coated. Allow it sit for around 10 minutes so the bread soak up the liquid.
Evenly distribute the mixture of bread among the muffin cups, with each around 3/4 full.
Cook in the preheated oven for 20-25 minutes, or until the tops are a golden brown and a toothpick inserted in the center should come out clean.
Before removing the muffin cups, let them cool for a few minutes in the pan. You can try it with toppings of your choice like fresh fruit, powdered sugar or maple syrup.
