Green Seasoning Recipe
Green Seasoning is a well known blend of fresh herbs and spices used to add flavor to a lot of dishes mainly in South African and Caribbean cuisines.

- 1 bunch fresh cilantro
- 1 bunch fresh parsley
- 1 bunch fresh thyme
- 1 bunch green onions scallions
- 1 small onion roughly chopped
- 1 head garlic peeled
- 1 small bell pepper roughly chopped
- 1-2 Scotch bonnet peppers adjust to taste
- 1/4 cup olive oil or vegetable oil
- 1/4 cup vinegar or lime juice
- Salt and pepper to taste
First of all, wash and roughly chop the thyme, parsley, cilantro and green onions. Chop the bell pepper, onion and scotch bonnet peppers roughly. Peel the garlic cloves.
In a food processor or a blender add the chopped onions, herbs, bell pepper, garlic and scotch bonnet peppers. Pour in the olive oil and lime juice or vinegar.
Mix until it forms a smooth paste, stopping to scrape down to ensure everything is well blended.
Include salt and pepper according to your taste and blend again to mix. You can store the green seasoning into an air-tight container or in a clean jar.
You can store it in the refrigerator for up to 15 days.
