Leftover ribs are the ribs that have been cooked previously, maybe as a main portion of the dish with some remaining parts.

Ingredients
  

  • Leftover ribs meat removed from the bones and chopped
  • Tortillas corn or flour, whichever you prefer
  • BBQ sauce
  • Shredded lettuce
  • Diced tomatoes
  • Sliced avocado
  • Chopped red onions
  • Shredded cheese cheddar or your favorite melting cheese
  • Sour cream optional
  • Lime wedges for serving
  • Cilantro for garnish

Instructions
 

  • First of all, heat the chopped leftover rib meat in a pan over medium heat. If the ribs are dry, you can add BBQ sauce to boost the flavor.
  • While the meat is warming, heat the tortillas either in a microwave or on a dry skillet until pliable and soft. Then, add some warm rib meat on each tortilla with some extra BBQ sauce.
  • Top the rib meat with diced tomatoes, shredded lettuce, sliced avocado, shredded cheese, chopped red onions or any desired toppings.
  • You can also add a dollop of sour cream if you want.
  • Sprinkle cilantro on top and you can serve with lime wedges for squeezing over the tacos.
