Ingredients
  

  • Dry Ingredients:
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Wet Ingredients:
  • 1/3 cup vegetable oil or melted butter
  • 1 large egg
  • ¾ cup buttermilk or milk with 1 teaspoon vinegar
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • Optional:
  • ½ cup blueberries or poppy seeds if desired

Instructions
 

  • Set the temperature of the oven to 190 C (375 F). Put the paper liners in a muffin tin or grease it.
  • In a large-sized bowl, mix the flour, baking powder, sugar, salt and baking soda together.
  • In a separate bowl, mix the oil or melted butter, buttermilk, egg, lemon zest, lemon juice until thoroughly mixed. Avoid overmixing; few lumps are fine. If you are using the poppy seeds or blueberries and fold them in.
  • Evenly divide the batter among the muffins cups, fill each around 2/3 full.
  • Bake until the toothpick inserted into the center comes out clean, it may take around 18-20 minutes.
  • Let the muffins cool in the pan for around 5 minutes, then transfer it to the wire rack to cool completely.
  • If you like, you can prepare a simple lemon glaze by mixing powdered sugar with a bit of lemon juice and drizzling it over the cool muffins.
