- Dry Ingredients:
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Wet Ingredients:
- 1/3 cup vegetable oil or melted butter
- 1 large egg
- ¾ cup buttermilk or milk with 1 teaspoon vinegar
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- Optional:
- ½ cup blueberries or poppy seeds if desired
Set the temperature of the oven to 190 C (375 F). Put the paper liners in a muffin tin or grease it.
In a large-sized bowl, mix the flour, baking powder, sugar, salt and baking soda together.
In a separate bowl, mix the oil or melted butter, buttermilk, egg, lemon zest, lemon juice until thoroughly mixed. Avoid overmixing; few lumps are fine. If you are using the poppy seeds or blueberries and fold them in.
Evenly divide the batter among the muffins cups, fill each around 2/3 full.
Bake until the toothpick inserted into the center comes out clean, it may take around 18-20 minutes.
Let the muffins cool in the pan for around 5 minutes, then transfer it to the wire rack to cool completely.
If you like, you can prepare a simple lemon glaze by mixing powdered sugar with a bit of lemon juice and drizzling it over the cool muffins.
