- 1 tablespoon olive oil
- 1 medium onion chopped
- 2 carrots sliced
- 2 celery stalks sliced
- 3 garlic cloves minced
- 6 cups chicken broth
- 1 pound boneless skinless chicken breasts or thighs
- 2 sprigs fresh rosemary or 1 teaspoon dried
- Juice and zest of 1 lemon
- Salt and pepper to taste
- Optional: 1 cup cooked rice or noodles
In a large-sized pot, heat the olive oil over medium flame. Add celery, carrots, onion and cook until sofetened, it may take around 5 minutes.
Mix in the garlic and cook for an additional minute until smells nice.
Pour in chicken broth, add the rosemary sprigs, chicken and a little salt and pepper. Let it boil and then reduce to a simmer.
Simer until the chicken is well cooked for around 25 minutes. Take the chicken out and shred using two forks and return it to the pot.
Mix in lemon zest and juice. If you are planning to add noodles or rice, add the now and heat well.
You can adjust the seasonings based on your taste and remove the rosemary sprigs and the soup warm for a cozy flavour.
