Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 garlic cloves minced
  • 6 cups chicken broth
  • 1 pound boneless skinless chicken breasts or thighs
  • 2 sprigs fresh rosemary or 1 teaspoon dried
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • Optional: 1 cup cooked rice or noodles

Instructions
 

  • In a large-sized pot, heat the olive oil over medium flame. Add celery, carrots, onion and cook until sofetened, it may take around 5 minutes.
  • Mix in the garlic and cook for an additional minute until smells nice.
  • Pour in chicken broth, add the rosemary sprigs, chicken and a little salt and pepper. Let it boil and then reduce to a simmer.
  • Simer until the chicken is well cooked for around 25 minutes. Take the chicken out and shred using two forks and return it to the pot.
  • Mix in lemon zest and juice. If you are planning to add noodles or rice, add the now and heat well.
  • You can adjust the seasonings based on your taste and remove the rosemary sprigs and the soup warm for a cozy flavour.
