- For the Lobster Filling:
- 1 cup cooked lobster meat chopped (you can use fresh or frozen)
- 2 tablespoons unsalted butter
- 1 tablespoon mayonnaise
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Optional: chopped fresh herbs like chives or parsley
- For the Grilled Cheese:
- 4 slices of bread sourdough, brioche, or your choice
- 2 cups shredded cheese a mix of sharp cheddar and Gruyère works well
- 2 tablespoons unsalted butter for grilling
In a bowl, mix the chopped lobster meat, mayonnaise, butter, lemon juice, salt and pepper. Mix until the lobster is well coated. You can also add chopped herbs for better flavour.
Lay out two slices of bread. Spread a good amount of lobster mixture on each, then add some shredded cheese. Top with the remaining bread slices.
Warm a pan over medium flame. Add a tablespoon of butter and allow it melt.
Put the sandwiches in the pan and cook until the cheese melts and bread turns golden brown, it may take around 3-4 minutes per side. You can press down a bit using a spatula to ensure even cooking.
Add more butter to the pan if required when flipping the sandwiches.
Once the cheese is melted and both sides are golden brown, take the sandwiches out from the skillet. Allow them cool a bit and then cut them in half before serving.
