Ingredients
  

  • For the Lobster Filling:
  • 1 cup cooked lobster meat chopped (you can use fresh or frozen)
  • 2 tablespoons unsalted butter
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Optional: chopped fresh herbs like chives or parsley
  • For the Grilled Cheese:
  • 4 slices of bread sourdough, brioche, or your choice
  • 2 cups shredded cheese a mix of sharp cheddar and Gruyère works well
  • 2 tablespoons unsalted butter for grilling

Instructions
 

  • In a bowl, mix the chopped lobster meat, mayonnaise, butter, lemon juice, salt and pepper. Mix until the lobster is well coated. You can also add chopped herbs for better flavour.
  • Lay out two slices of bread. Spread a good amount of lobster mixture on each, then add some shredded cheese. Top with the remaining bread slices.
  • Warm a pan over medium flame. Add a tablespoon of butter and allow it melt.
  • Put the sandwiches in the pan and cook until the cheese melts and bread turns golden brown, it may take around 3-4 minutes per side. You can press down a bit using a spatula to ensure even cooking.
  • Add more butter to the pan if required when flipping the sandwiches.
  • Once the cheese is melted and both sides are golden brown, take the sandwiches out from the skillet. Allow them cool a bit and then cut them in half before serving.
