Ingredients
  

  • For the Chicken:
  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish
  • For the Pasta:
  • 8 oz pasta fettuccine, penne, or your choice
  • Salt for pasta water

Instructions
 

  • In a large-sized pot, add the water and bring it to boil. Cook the pasta based on the instruction of the package until firm. Drain and keep it aside.
  • Season the chicken breasts with salt and pepper. In a large skillet, warm butter or olive oil over medium flame. Add the chicken and cook until golden brown and thoroughly cooked, it may take around 6-7 minutes per side. Remove the chicken from the pan and put it aside.
  • In the similar pan, add chopped garlic and cook until smells nice for around 30 seconds. Add the sun-dried tomatoes and cook for one more minute. Pour in the chicken broth and heavy cream, mix to combine everything. Boil it gently.
  • Mix in the Italian seasoning and parmesan cheese. Cook the sauce until gets thickened, it may take few minutes. Taste and adjust the seasoning based on the requirement.
  • Slice the cooked chicken and put it back to the pan with the sauce. Add the cooked pasta and mix everything until thoroughly coated.
  • You can garnish the pasta with parmesan cheese and fresh basil. It's time to serve.
