- For the Cheesecake Mixture:
- 8 oz 225g cream cheese, softened
- 1 cup pumpkin puree not pumpkin pie filling
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice or a mix of cinnamon, nutmeg, and ginger
- For Coating:
- 1 cup graham cracker crumbs
- 1/2 cup white chocolate chips or chocolate coating optional
- Additional pumpkin pie spice or cinnamon for dusting optional
In a bowl, mix the softened cream cheese, powdered sugar, pumpkin puree, pumpkin pie spice and vanilla extract. Mix everything until well mixed.
Cover the bowl with plastic wrap and put the mixture in the refrigerator for around 0.5 - 1 hour. It will help you shape it into balls easily.
Once chilling, use your hands or a cookie scoop to turn the mixture into balls, around an inch wide. Put them on a baking sheet lined with parchment paper.
Coat each ball in graham cracker crumbs until well covered. For using white chocolate, melt it in a microwave-safe bowl, then dip each ball in the chocolate. Drip of the excess chocolate before putting them on the parchment paper.
Place the coated balls in the refrigerator for more 30 minutes to allow them set.
After they're set, add some additional pumpkin pie spice or cinnamon as topping for better flavour.
