Ingredients
  

  • For the Cheesecake Mixture:
  • 8 oz 225g cream cheese, softened
  • 1 cup pumpkin puree not pumpkin pie filling
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice or a mix of cinnamon, nutmeg, and ginger
  • For Coating:
  • 1 cup graham cracker crumbs
  • 1/2 cup white chocolate chips or chocolate coating optional
  • Additional pumpkin pie spice or cinnamon for dusting optional

Instructions
 

  • In a bowl, mix the softened cream cheese, powdered sugar, pumpkin puree, pumpkin pie spice and vanilla extract. Mix everything until well mixed.
  • Cover the bowl with plastic wrap and put the mixture in the refrigerator for around 0.5 - 1 hour. It will help you shape it into balls easily.
  • Once chilling, use your hands or a cookie scoop to turn the mixture into balls, around an inch wide. Put them on a baking sheet lined with parchment paper.
  • Coat each ball in graham cracker crumbs until well covered. For using white chocolate, melt it in a microwave-safe bowl, then dip each ball in the chocolate. Drip of the excess chocolate before putting them on the parchment paper.
  • Place the coated balls in the refrigerator for more 30 minutes to allow them set.
  • After they're set, add some additional pumpkin pie spice or cinnamon as topping for better flavour.
  • It's time to serve the cheesecake balls.
