- For the Cookies:
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- For the Filling:
- 12-16 mini peanut butter cups or regular-sized, halved
Set the temperature of the oven to 175 C (350 F) and line a baking sheet with parchment paper.
In a big bowl, mix the granulated sugar, peanut butter, baking soda, vanilla extract and salt. Mix until thoroughly combined and smooth.
Make small balls of dough around an inch wide using your hand or a cookie scoop and put them on the baking sheet, separating them each by some space.
Bake in the oven until the edges are lightly golden, it may take around 10-12 minutes. The centers may be a bit underbaked, that is ok as they will continue to cook on the baking sheet.
Take out the cookies from the oven and press a mini peanut butter cup into the center of each cookie. Let the cookies cool before transferring them on a wire rack.
