Pumpkin Spice Pancakes Recipe

Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon pumpkin pie spice or a mix of cinnamon, nutmeg, and ginger
  • 1/2 teaspoon salt
  • 1 cup milk or milk alternative
  • 1/2 cup canned pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract

Instructions
 

  • In a large-sized bowl, you can mix the flour, baking powder, sugar, salt and pumpkin pie spice.
  • In a separate bowl, mix the milk, egg, melted puree, melted butter and vanilla extract until thoroughly combined.
  • Combine the mix and dry ingredients and slowly gently until they're are thoroughly combined. It's fine , if it contain few lumps; avoid overmixing.
  • Warm the griddle or non-stick pan over medium heat. Ensure to coat it with cooking spray or butter.
  • Pour around 1/4 cup of batter onto the pan for each pancake. Cook until the bubbles appear on top and the edges look firm, it may take around 2-3 minutes. Then flip it and cook until golden brown, it may also take around 1-2 minutes.
  • You can serve it with maple syrup, whipped cream or your favourite toppings.
