- 1 head of purple cauliflower cut into florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh lemon juice optional
- Fresh herbs like parsley or thyme, for garnish
Set the temperature of the oven to 220 C (425 F).
In a large bowl, mix the cauliflower pieces with garlic powder, olive oil, salt, paprika and pepper until they are thouroughly coated.
Over the baking sheet, put the cauliflower in a single layer lined with parchment paper.
Roast in the preheated oven until the cauliflower is turned browned and tender, it may take around 20-25 minutes. Ensure to stir half-way through to cook evenly.
Once it is done, remove it from the oven and sprinkle fresh lemon juice. You can also add fresh chopped herbs for a refreshing twist.
