- 12 large hard-boiled eggs peeled
- 2 cups white vinegar
- 1 cup water
- 1 tbsp sugar
- 1 tbsp salt
- 1 tsp black peppercorns
- 1 tsp mustard seeds
- 1 tsp coriander seeds
- 1 tsp dill seeds optional
- 3 cloves garlic smashed
- 2-3 bay leaves
- 1 tsp smoked paprika
- 1 tsp crushed red pepper flakes adjust for heat
- 2 fresh chili peppers like jalapeƱo or serrano, sliced
- 1 small red onion sliced (optional for color and flavor)
First of all, hard boil the eggs for around 10 minutes. Cool in ice water, then peel.
In a saucepan, mix sugar, vinegar, salt, water, garlic and other spices. Heat until it starts boiling and then reduce the flame and allow it cook for around 5 minutes.
In a large-sized sterilizing jar, add the eggs, onions and sliced chili peppers.
Pour the hot brine over the eggs in a way that the eggs are completely submerged.
Close the jar and let it cool at room temperature. You can put it in the refrigerator for at least 3-7 days for more flavor.
