- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Optional: diced tomatoes chopped green chilies, chopped cilantro, diced onions, or cooked crumbled sausage for additional flavor
In a pan, melt the butter over medium heat.
Add the flour and cook for around a minute for a thick mixture.
Slowly pour in the milk while stirring constantly to avoid lumps from forming.
Cook the mixture for around 3-5 minutes until it thickens.
Lower down the heat and stir in the shredded cheddar and Monterey Jack cheeses until it is smooth and melted.
Now, add the paprika, cumin, garlic powder, salt and pepper and stir properly.
You can also add chopped green chilies, diced tomatoes, diced onions, chopped cilantro or cooked crumbled sausage.
It’s time to serve the queso. You can serve it with tortilla chips or your preferred dip.
