Ingredients
  

  • For the filling:
  • 4 cups of corn kernels fresh, frozen, or canned
  • 1 small onion finely chopped
  • 1 bell pepper any color, finely chopped
  • 2 cloves of garlic minced
  • 1 cup of shredded cheese cheddar, Monterey Jack, or your preferred cheese
  • 1/4 cup of chopped fresh cilantro optional
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • For the crust:
  • 1 9- inch pie crust store-bought or homemade

Instructions
 

  • Set the temperature of the oven to 375 F (190 C).
  • In a skillet, warm the olive oil over medium heat. Add bell pepper and chopped onion, and cook until soft, it may take around 5 minutes. Then, add minced garlic and cook for more 1-2 minutes until smells nice.
  • In a pan, add corn kernels and cook for around 5-7 minutes by stirring occasionally until the corns are soft. You can season it with salt and pepper.
  • Remove the pan from the stove and let it cool slightly. Then, mix in the cilantro and cheese by ensuring that everything is mixed well.
