In a big skillet, heat the olive oil over medium-high flame.
Season the chicken pieces with salt and pepper and put them into the skillet. Cook it until brown, it may take around 5-7 minutes. Now, take the chicken out from the pan and keep it aside.
In a similar skillet, include the diced potatoes and cook them until brown, it may take around 5 minutes.
Now, add sliced onion, mushroom and bell pepper to the skillet and cook it for 5 minutes until the veggies are soft.
Mix the red pepper flakes and minced garlic into the skilletand make sure to cook for an additional minutes until they smell nice.
Place the cooked chicken back into the skillet and mix everything.
Include the chicken broth and white vinegar, stirring well. Allow the mix to simmer until it’s hot.
Now, lower the flame and cover the pan. Allow it to simmer until the potatoes are soft and chicken is cooked, it may take around 15-20 minutes.
Adjust the salt and pepper according to your taste.
Before serving, make sure to garnish the dish with chopped parsley.
