In a big bowl, mix the chicken with seasoned salt and limejuice. If you want more flavor, make sure to keep it in the fridge by placing alid on it for a minimum 1 hour or more.
Over the normal heat, heat the oil in a large pot. Now, you need to add the green pepper, onion until they are soft. It may take around 5 minutes.
Add the carrots, potatoes, red pepper flakes, bay leaves, all spice, lime juice, marinated chicken and water. Allow it to boil, then reduce the heat and simmer for around 45 minutes or until the potatoes are tender and chicken is thoroughly cooked.
