- 1.5 cup all-purpose flour
- 1.5 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup granulated sugar
- 3 large eggs
- 1 teaspoon coconut extract
- 1 cup sweetened coconut shredded
- 1/2 cup coconut milk unsweetened
- 1/2 cup unsalted butter softened
Set the temperature of the oven to 175 C (350 F) and greasea loaf pan (9X5 inches).
In a medium-sized bowl, mix the flour, salt and baking powder.
In a large bowl, add sugar and butter and mix it until fluffy and light. Now add the eggs one at a time, then mix in coconut milk and coconut extract.
Now, mix the dry ingredients with the wet ingredients and coconut milk, starting and ending with the dry ingredients. Mix until everything is thoroughly combined.
Mix in the shredded coconut.
Now, you need to pour the batter into the loaf pan for around 60-65 minutes, or until the inserted toothpick in the center comes outclean.
Allow it to cool in the pan around 10 minutes before moving to the wire rack to cool thoroughly.
