Ingredients
  

  • 1.5 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon coconut extract
  • 1 cup sweetened coconut shredded
  • 1/2 cup coconut milk unsweetened
  • 1/2 cup unsalted butter softened

Instructions
 

  • Set the temperature of the oven to 175 C (350 F) and greasea loaf pan (9X5 inches).
  • In a medium-sized bowl, mix the flour, salt and bakingpowder.
  • In a large bowl, add sugar and butter and mix it untilfluffy and light. Now add the eggs one at a time, then mix in coconut milk andcoconut extract.
  • Now, mix the dry ingredients with the wet ingredients andcoconut milk, starting and ending with the dry ingredients. Mix untileverything is thoroughly combined.
  • Mix in the shredded coconut.
  • Now, you need to pour the batter into the loaf pan foraround 60-65 minutes, ot until the inserted toothpick in the center comes outclean.
