Preheat your oven at 350°F (175°C) and use a baking sheet lined with parchment paper.
Stir softened butter with brown sugar and granulated sugar, until light and fluffy.
Add in eggs one at a time and then some vanilla till thoroughly mixed.
Whisk together flour, soda, salt, and instant coffee in a separate bowl.
Gradually add the dry ingredients into the wet mixture without overmixing.
If you need, fold in the chocolate chips and chopped nuts till evenly mixed.
Take a cookie scoop or a tabletop and make rounded balls of dough onto the lined baking sheets, leaving space in between each cookie.
In the preheated oven, bake for 10-12 minutes, when the edges are just about to turn golden. The inside will look a little underbaked, but when it cools down, they will cook a bit more.
Remove the cookies from the oven, and let the baking sheets sit for about 5 minutes as the cookies set a little bit more. Now, carefully move the soft cookies to a wire rack to set completely.
Serve the coffee biscuits warm or at room temperature with a cup of coffee or tea!
