2poundsred potatoes washed and cut into cube sized
1cupHellmann’s mayonnaise
1tablespoonwhite vinegar
2tablespoonsDijon mustard

Instructions
In a large pot, put the red potato pieces, cover with water and a bit of salt. Now, you need to cook the potatoes until fork-tender, it may take around 10-15 minutes. Then, Drain them and allow it to cool.
In a bowl, mix Dijon mustard, Hellmann’s mayonnaise, salt and pepper, sugar and vinegar. Make sure to adjust the seasoning according to your preference.
In a big bowl, add chopped celery, cooked potatoes, and red onion.
Drizzle the dressing onto the potatoes and mix until all are covered with it.
If you’re using hard boiled eggs mix them carefully into the salad.
Cover the bowl with a lid and place the potato salad in the fridge for minimum 2 hours. It makes the salad cold and tasty.
Now, you can add parsley on the top of it. Stir it gently, and your potato salad is ready to get served.
