Ingredients
  

  • 2 pounds red potatoes washed and cut into cube sized
  • 1 cup Hellmann’s mayonnaise
  • 1 tablespoon white vinegar
  • 2 tablespoons Dijon mustard
  • Salt and pepper
  • 1/2 cup celery finely chopped
  • 1 teaspoon sugar
  • 1/4 cup red onion finely chopped
  • 2 hard boiled eggs chopped
  • Fresh parsley for garnishing

Instructions
 

  • In a large pot, put the red potato pieces, cover with water anda bit of salt. Now, you need to cook the potatoes until fork-tender, it maytake around 10-15 minutes. Then, Drain them and allow it to cool.
  • In a bowl, mix Dijon mustard, Hellmann’s mayonnaise, saltand pepper, sugar and vinegar. Make sure to adjust the seasoning according toyour preference.
  • In a big bowl, add chopped celery, cooked potatoes, and red onion.
