Set the temperature of the oven to 325 F (163 C).
Remove the excess fat from the lamb breast by keeping a thin layer for taste. You can use a knife to cut the side of lamb to cook it better. Sprinkle salt and pepper to both sides of the lamb.
In a little bowl, add olive oil, minced garlic, thyme, paprika, and chopped rosemary.
Spread the mixture of the herb all over the lamb to ensure that it is evenly coated.
Now, place the lamb breast with its fatty side facing up in a roasting pan or baking sheet. Cook it in the preheated oven for around 2-2.5 hours.
You can also pour the lamb’s juice on it in every half an hour to make it even more tasty and juicy.
After cooking, remove the lamb from the oven and allow it to cool for around 10-15 minutes. It ensures that the juice is spread evenly.
Divide the lamb into pieces against the grain. You can enjoy it with your favorite sides like couscous, roasted vegetables or a minty yogurt sauce.
