Set the temperature of the oven to 350 F (175 C). Place the aluminum foil or parchment paper on the baking sheet.
Now, arrange the matzo crackers in a single layer on the baking sheet. You can also break them if required to fit the pan.
In a medium-sized saucepan, melt the butter over medium heat. Once melted, add the brown sugar and make sure to stir until thoroughly combined.
Heat the butter and sugar mixture in a pan, stir continuously. Allow it to boil for 3-4 minutes until it thickens like a caramel.
Pour the warm caramel mixture over the matzo crackers, and make sure to spread it evenly using a spatula.
Place the baking sheet in the oven and bake for 10-12 minutes until the caramel turns golden brown and bubbly.
Remove the baking sheet from the oven and sprinkle some chocolate chips evenly on the caramel covered matzo.
Allow the chocolate chips to rest for few minutes until soften. You can use a spatula or spoon back to spread the chocolate evenly on the matzo.
You can also add some extra toppings on the melted chocolate.
Now, let the matzo crack cool at room temperature or you can also place it in the refrigerator to cool faster.
Once it is cooled and hardened, break the matzo into small pieces and place them in an air-tight container at room temperature for up to 7 days.
