First of all, wash the dried Mayocoba beans with cold water. Put them in a big pot and cover them with water. Let them soak for a minimum of 6 hours or preferably overnight.
After soaking the beans, drain them rinse the beans. Place them back in the pot add 4 cups of fresh water and a teaspoon of salt. Boil it until starts bubbling, and then lower down the heat and cook for around 1-1.5 hours until the beans are soft. Remove the excess water and let the beans cool slightly.
Mixed cooked Mayocoba beans with red bell peppers, minced jalapeno peppers, chopped red onion and chopped cilantro in a bowl.
In a little bowl, mix the lime juice and olive oil. Now, pour the dressing over the mixture of the beans and then toss everything until evenly coated.
Season the salad with salt and pepper as per your liking. You can either consume it right away or put it in the refrigerator to let the flavor meld together.
Now, it’s time to serve the Mayocoba beans. You can either consider it as a side dish or as a light meal.
