Ingredients
  

  • 2 cups dried Mayocoba beans
  • 4 cups water
  • 1 teaspoon salt
  • 1 red bell pepper diced
  • 1/2 red onion finely chopped
  • 1 jalapeno pepper seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Salt and pepper

Instructions
 

  • First of all, wash the dried Mayocoba beans with cold water.Put them in a big pot and cover them with water. Let them soak for a minimum of 6 hours or preferably overnight.
  • After soaking the beans, drain them rinse the beans. Placethem back in the pot add 4 cups of fresh water and a teaspoon of salt. Boil it until starts bubbling, and then lower down the heat and cook for around 1-1.5 hours untilthe beans are soft. Remove the excess water and let the beans cool slightly.
  • Mixed cooked Mayocoba beans with red bell peppers, minced jalapeno peppers, chopped red onion and chopped cilantro in a bowl.
  • In a little bowl, mix the lime juice and olive oil. Now,pour the dressing over the mixture of the beans and then toss everything until evenly coated.
