First of all, set the grill to medium-high heat.
In a little bowl, add olive oil, smoked paprika, minced garlic, dried thyme, salt, onion powder an black pepper to make the marinade.
Put the tri-tip steak in a resealable plastic bag or in a large dish. Now, pour the marinade over the steak by ensuring it is evenly coated. Allow the marinade to soak for a minimum half an hour to 1 hour or preferably overnight for better flavor.
Once the grill heats up, take out the tri tip from the marinade mixture and place it on the gril. Grill the steak for around 5-7 minutes on each side until it reaches your level of doneness.
Take the tri-tip off the grill and allow it to rest for around 10 minutes before slicing against the grain.
Now cut the ciabatta bread or sandwich rolls in half and then gently toast them on the grill.
To prepare the sandwich, put the horseradish sauce or any preferred condiment on the bottom half of each roll. Then, add baby spinach or arugula and you can also add slices of red onion or tomatoes on top.
Put the sliced tri-tip steak on the veggies, then cover with the top half of the roll on it.
Now, it’s time to serve the tri-tip sandwich.
