In a little bowl, put gelatin over the cold water. Let it sit for around 5 minutes until softened.
In a large bowl, whip the heavy cream until it is fluffy and then place it in the refrigerator until you are using it.
In a bowl, mix the sugar and egg yolks until become light and slightly thicker.
Put the bowl over a pot of gently boiling water (double boiler). Keep stirring the mixture until the mixture is thickened, it may take around 5 minutes. Then, take it off the heat.
Now, warm the gelatin mix in the microwave until dissolves completely, it may take around 10-15 seconds. Let it cool a bit, then mix it into egg yolk mixture until completely combined.
Stir it in the seeds from the vanilla bean or in the vanilla extract.
Gently mix the whipped cream into the egg yolk mixture until it is evenly combined.
Pour the mousse into small dishes or glasses by ensuring that it is evenly divided. Then, cover and put them in the fridge for a minimum of 2 hours.
It’s time to serve the vanilla mousse. You can also garnish it with fresh berries, whipped cream or mint leaves.
