Ingredients
  

  • 1 cup 240 ml heavy cream, chilled
  • 3 large egg yolks
  • 1/4 cup 50 g granulated sugar
  • 1 teaspoon vanilla extract or the seeds from 1 vanilla bean
  • 1 teaspoon unflavored gelatin powder
  • 2 tablespoons 30 ml cold water
  • Optional: whipped cream fresh berries, or mint leaves for garnish

Instructions
 

  • In a little bowl, put gelatin over the cold water. Let it sit for around 5 minutes until softened.
  • In a large bowl, whip the heavy cream until it is fluffy and then place it in the refrigerator until you are using it.
  • In a bowl, mix the sugar and egg yolks until become light and slightly thicker.
  • Put the bowl over a pot of gently boiling water (double boiler). Keep stirring the mixture until the mixture is thickened, it may take around 5 minutes. Then, take it off the heat.
  • Now, warm the gelatin mix in the microwave until dissolves completely, it may take around 10-15 seconds. Let it cool a bit, then mix it into egg yolk mixture until completely combined.
  • Stir it in the seeds from the vanilla bean or in the vanilla extract.
  • Gently mix the whipped cream into the egg yolk mixture until it is evenly combined.
  • Pour the mousse into small dishes or glasses by ensuring that it is evenly divided. Then, cover and put them in the fridge for a minimum of 2 hours.
