Ingredients
  

  • 1 pound 450 g ground venison
  • 1/2 cup 60 g breadcrumbs
  • 1/4 cup 25 g grated Parmesan cheese
  • 1/4 cup 60 ml milk
  • 1 large egg
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped (or 1 teaspoon dried parsley)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 tablespoons olive oil for frying
  • Optional Sauce:
  • 1 can 28 oz/800 g crushed tomatoes
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Set the temperature of the oven to 375 F (190 C).
  • In a bowl, mix milk and breadcrumbs. Let it sit for few minutes to allow the breadcrumbs absorb the milk.
  • Add ground venison, finely chopped onion, egg, grated parmesan, chopped parsley, salt, pepper, minced garlic, rosemary and thyme.
  • Mix everything until thoroughly combined but prevent overmixing.
  • Turn the mixture into the meatballs, each with diameter of around 1-1.5 inches.
  • Coo the meatballs by heating the olive oil over medium heat. Put the meatballs in batches, avoid overcrowding the pan. Cook until the meatballs turn brown from everywhere for around 6-8 minutes. Put them on a paper towel plate to drain excess oil.
  • You can also try baking method of cooking the meatballs. Put the meatballs on a baking sheet lined with parchment paper. Put it in the oven for around 15-20 minutes.
  • Now, prepare the sauce, heat the olive oil over medium flame. Then, include finely cut onion and cook until translucent for around 5 minutes.
  • Add minced garlic and cook for an additional minute. Mix in the dried basil, crushed tomatoes, dried oregano, salt and pepper and let it simmer.
  • Put the cooked meatballs into the sauce. Allow it to cook fro around 10-15 minutes to meld the flavors well.
