Ingredients
  

  • 1 pound ground beef or ground turkey
  • 1 onion diced
  • 2 cloves garlic minced
  • 4 cups beef or chicken broth
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 can sliced carrots
  • 1 can diced potatoes
  • 1 cup sliced celery
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper
  • 1 cup frozen corn or peas
  • Grated Parmesan cheese

Instructions
 

  • In a big pot, cook the turkey or ground beef over mediumheat until browned, use a spoon to break it apart. Remove the excess fat.
  • Put the crushed garlic and chopped onion into the pot withcooked meat. Cook for few minutes until the onions are soft.
  • Add the chicken broth or beef, tomato sauce and dicedtomatoes. Combine everything thoroughly.
  • Add the sliced celery, sliced carrots, diced potatoes, driedoregano and dried basil to the pot. Adjust the salt and pepper according totaste.
  • Warm the soup over medium heat until it starts bubbling.Cover and cook it for around 20-25 minutes until the veggies are tender andsoft.
  • You can also put the peas or frozen corn in the soup duringthe last minutes of cooking until cooked thoroughly.
