Ingredients
  

  • 1 ½ cups fresh rhubarb diced
  • 2 tablespoons sugar for rhubarb
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1 cup quick-cooking oats

Instructions
 

  • In a bowl, mix the chopped rhubarb with 2 tablespoons of sugar. Keep it aside or around 5 minutes to soften the rhubarb.
