Ingredients
  

  • 1 whole chicken cut into pieces
  • 3 tablespoons lime juice
  • 1 tablespoon vegetable oil
  • 1 tablespoon seasoned salt
  • 1 large onion diced
  • 6 large potatoes peeled and diced
  • 1/2 green pepper diced
  • 3 carrots diced
  • 1/2 teaspoon red pepper flakes crushed
  • 1 tablespoon ground allspice
  • 2 bay leaves
  • 3 cups water
  • 3/4 cup lime juice
  • Salt and pepper
  • Chopped fresh parsley for garnish

Instructions
 

  • In a big bowl, mix the chicken with seasoned salt and limejuice. If you want more flavor, make sure to keep it in the fridge by placing alid on it for a minimum 1 hour or more.
  • Over the normal heat, heat the oil in a large pot. Now, youneed to add the green pepper, onion until they are soft. It may take around 5minutes.
  • Add the carrots, potatoes,red pepper flakes, bay leaves, allspice, lime juice, marinated chicken andwater. Allow it to boil, then reduce the heat and simmer for around 45 minutes oruntil the potatoes are tender and chicken is thoroughly cooked.
  • Now, it’s time to include the salt and peppers. Add themaccording to your liking. You can also add chopped parsley on the top.
  • It’s time to serve the dish hot over rice or with the crustybread.
