Ingredients
  

  • 2 cups fresh or frozen pitted cherries
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tablespoon lemon juice optional, for added acidity

Instructions
 

  • First of all, if you are using the fresh cherries, remove their pits and wash them. In case of frozen cherries, measure the required amount you want.
  • In a medium-sized pan, mix sugar, cherries and water. You can also include lime juice.
  • Put the pan over medium heat. Mix the mixture until it starts boiling and the sugar dissolves.
  • Lower the heat and cook the mixture slowly until the cherries are juicy and soft, it may take around 20-25 minutes.
  • Use can either use back of a spoon or a potato masher to mash the cherries to extract juice and flavor.
