Ingredients
  

  • Ingredients for Beans:
  • 1 pound about 450g dried pinto beans
  • 1 onion chopped
  • 3 cloves garlic minced
  • 6 cups 1.5 liters water
  • Salt and pepper to taste
  • Ingredients for Cornbread:
  • 1 cup 120g cornmeal
  • 1 cup 125g all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup 240ml milk
  • 1/4 cup 60ml vegetable oil
  • 1/4 cup 60g sugar (optional, for sweeter cornbread)
  • 2 eggs

Instructions
 

  • Prepare the beans
  • First of all, rinse the beans with cold water to remove any dirt particle.
  • In a pot, add chopped onion, beans, water and minced garlic.
  • Heat the mixture until it starts boiling, then reduce the heat and cook it for around 1-1.5 hours until the beans are soft. Stir the mixture and add water as required.
  • Once the beans are tender, make sure to season it with salt and pepper according to your .
  • Prepare the cornbread
  • Set the temperature of the oven to 200 C (400 F) and grease a baking sheet.
  • In a bowl, add flour, cornmeal, salt and baking powder.
  • In a separate bowl, mix vegetable oil, milk, sugar and eggs.
  • Now, add the wet ingredients to the dry ingredients, but avoid overmixing it. Pour the batter into the baking sheet and ensure even spreading.
  • Bake for around 20-25 minutes until the cornbread is brown and the toothpick inserted at the center comes out clean.
